'MARANAO RECIPE - TAKOBONG || REGIONAL FOOD  #MaranaoFoodRecipe #MaranaoCuisine  Takobong is a Philippine regional food from one of the provinces in Mindanao, particularly from the #Maranaos.  Its main ingredient is grilled tuna coated with some spices, cooked over low heat until the liquid disappears, and then oven or sun dried or grill dried.   The secret ingredient to any authentic Maranao dish is the spice called \"palapa\" (pounded Sakurab + Ginger and Chili). Sakurab is a locally-grown spice similar to spring onion but with a thinner leaf and more distinct unique flavor.   If \"Sakurab\" (white scallion) is not available in your area, you can substitute it with spring onion, albeit not exactly similar in taste but it is the closest spice I could think of.  In this video, I am showing my version of Takobong that I learned from my mother.   This recipe is very ideal for long travels because it doesn’t spoil quickly. It can last for days or a month if stored properly. It’s quite a long process but not complicated. It’s definitely worth a try.  Cooking Tool & Equipment used in this video:  - Manual Food Processor - used in grinding the spices. If you don\'t have a food processor, a mortar & pestle will do.  - Multifunctional electric skillet - used to grill the tuna.
